Ingredients:

Instructions:
- Heat a pan over medium-high heat. Add butter. Once melted and foamy, add garlic and cook for 30 seconds.
- Add prawns in a single layer. Cook for two to three minutes per side until pink. Prawns are ready when they curl into a loose C-shape and are fully opaque and pink. A tight O-shape means they've gone too far.
- Finish with a squeeze of lemon juice, scatter parsley, and serve immediately.
- Serve with steamed rice, crusty bread, or tossed through pasta.
Recipe 2: Pan-Seared Scallops with Lemon Butter
Scallops look impressive, and they don’t require expert cooking techniques. The whole method involves a properly hot pan, a single undisturbed sear per side, and a quick butter baste at the end. The payoff is a deep golden crust on the outside and a sweet, tender center.
Cooking Time: 6 minutes
Ingredients:

- 2 tablespoons unsalted butter
- 2 cloves garlic, minced
- Juice of half a lemon
- Fresh thyme or chives
- Salt to taste
- Neutral oil for searing
Instructions:
- Heat a pan over high heat with a thin layer of neutral oil until just smoking.
- Place scallops in the pan, and avoid crowding them. Each scallop needs space. Otherwise, it will steam instead of sear, and the crust won't develop.
- Sear for 90 seconds to two minutes until a golden crust forms, then flip each piece.
- Add butter, garlic, and lemon juice in the last 30 seconds. Baste the scallops continuously.
- The scallops are done when you see a deep golden sear on each flat side with a slightly translucent center. Also, the scallop releases naturally from the pan when it's ready to flip.
- Remove immediately and finish with fresh herbs.
